A Maine tradition, and one of our guests’ favorite selections, Needhams are a chocolate-covered, soft center coconut confection, but only at Len Libby’s are they handmade with FRESH coconut. We buy whole coconuts and crack the outside hard shell with a hatchet. Inside is a fresh coconut ball encased in a thin skin. We peel the skin and then cut the coconut ball in half. Next, the coconut halves are shredded.
Following our Len Libby original and exclusive recipe, we cook the coconut then pour the ingredients onto a marble table to cool. Once cooled, we hand-cut this coconut confection into individual pieces then hand dip them in our Len Libby Signature Chocolate.
